Create the Bacon Weave

The first step is to take the slices of bacon and create a weave of them.
Make sure you save about 200 grams of bacon for the stuffing.

Fire up the Grill

You should fire up the grill while creating the weave so it's nice and hot when you're done.

The Complete Weave

This is what the weave looked like when it was all done. Our bacon was quite thin so we made two weaves and put them on top of eachother.

Minced Meat & Spices

Now that we have the bacon weave it's time to add the stuffing to the explosion.
The original recipe suggests italian sausage but we didn't have any so we used minced meat instead. What we did was simply to put the minced meat on top of the weave and then flatten it with our hands so it evenly covered the entire weave.
On top of this we seasoned the meat with salt, pepper, basil and garlic powder since minced beef doesn't taste much on it's own.

Bacon Stuffing

Remember the 200 grams of bacon we saved in the first step?
We cut it in smaller pieces and fried it. This goes on top of he minced meat, again it should be evenly spread.

Chipotle Sauce

On top of the bacon we smeared Chipotle barbeque sauce. How much is a matter of taste, we took all we had which wasn't that much, about 150 ml I'd say.

Roll it Together

Everything is done by now so it's time to roll it together.
Here's where we made our first mistake. We rolled he entire thing in one go instead of just the stuffing first and then wrap the weave around it. This made it not close properly, something that we addressed in the next step.

Make it Stay Together

In order to keep the bacon explosion in one piece we took splinters of wood and ran them straight through.
This turned out to be a mistake so we swapped the splinters for string later on. I guess it'll hold together without any aids at all if you do this the proper way and roll the stuffing and the weave separatly.

Time for Hickory Sauce

Almost ready for the grill now.
The final thing we did before putting it on the grill was to smear the entire thing with Hickory Sauce.

It's ready for the grill. This is what it looked like.
What this photo doesn't show is that we moved all the charcoal to the sides of the grill.

Here we are just before we put the explosion on the grill.

Put it on the Grill

Make sure to put the bacon explosion in the middle of the grill. With all the charcoal on the sides this will make sure that it doesn't get burnt and that it cooks evenly.

Don't Forget the Lid

Remember to put the lid on the grill.

Adding More Hickory

We added Hickory whilst the bacon explosion was on the grill.
In total we took the lid off four times to add more Hickory and turn it around.

It took about 40 minutes to cook the bacon explosion.

The First Slice

Time to eat. This was one of the best meat dishes I've ever had. Topped of with new potatoes, sallad and garlic bearnaise it was as close to heaven as you'll ever get.

What We'll Change

This was the first attempt. It was very good but can get better.
Next time we'll definitely make sure to have some kind of italian sausage and proper spices.
We'll also do the rolling the right way so that we'll avoid the troubles we had with keeping the thing together. I belive I'll also try pouring some beer on it next time to see what that'll do to it.
